Master Kuo GL 500mm Long Taiwan Tuna Knife is a big fish knife with a long, straight blade. It is used to make the cross sectioning cuts on large fish like Tuna, Mahi, swordfish, etc. It is a mix of a Japanese Deba, a Japanese Yanagi, and a western Chef knife. This model uses a stainless steel clad with a HSS steel core and a stainless steel handle. Hardness is RC 60-61.
