You'll note that there are several same-grit stones in the Plum Series. That is because the Nubatamas emulate Japanese Natural Stones, and have different formulations for specific sharpening needs. In other words, they are very customizable. The Nubatamas Plum Series Stones are used with water only, and it is recommended that they be pre-soaked for 2-5 minutes before use to enhance their performance.
